Baking - Pretty Pumpkin Spice Cupcakes

One of my favorite things about fall:

Pumpkin Spice Cupcakes!



 You'll Need:

1 cup fresh pumpkin puree
2 eggs
1/2 cup vegetable oil
1/3 cup water
1 1/2 cups white sugar
1 3/4 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/8 teaspoon ground ginger



Instructions:

Preheat oven to 350 degrees F (175 degrees C).

In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Stir the dry ingredients into the pumpkin mixture until just blended.

Pour into cupcake liners and bake for 21-23 mins.

They are done when toothpick inserted in center comes out clean.

Let cool completely before frosting.

For Cream Cheese Frosting you'll need:

1 package of cream cheese
1/2 a stick of butter
1 teaspoon vanilla
1 cup powdered sugar

Cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners' sugar.

Then EAT!
